Ingredients

1 Tbsp. olive oil
40 cloves whole garlic, peeled
1/4 tsp. dried rosemary leaves
1/4 tsp. dried thyme leaves
1/8 tsp. crumbled sage leaves
1 whole roasting chicken (4 to 6 lb.)
1 Tbsp. lemon juice
salt and pepper
Preparation

Combine olive
oil, garlic and herbs in a deep roasting dish. Rinse chicken and
pat
dry.
Place chicken over garlic mixture. Drizzle with lemon\tjuice.\tSprinkle
with\tsalt and pepper. Place covered pot in
a 350\u00b0 oven.\tBake until tender and juices run clear, about
1
1/2
hours.
Remove
cover and bake for 5 to 10\tminutes
longer.
Carve
chicken
and
spoon cooking liquid over chicken.
