Seafood Gumbo - cooking recipe

Ingredients
    1/2 c. oil
    1/2 c. flour
    2 c. onion, chopped
    1 c. celery, chopped
    1 gal. water
    4 garlic cloves, minced
    2 lb. shrimp
    1/2 lb. catfish fillets
    1/2 pt. oysters
    1/2 tsp. parsley
    gumbo file
    red and black pepper to taste
Preparation
    Make roux with oil and flour. Add onions and celery. Cook until onions are wilted. Add water and garlic. Cook in heavy pot, uncovered, over medium heat for 1 hour. Season with peppers. Add shrimp, parsley and fish to mixture. Cook another 15 minutes. Add oysters and let come to boil.
