Zucchini Pancakes - cooking recipe

Ingredients
    3 c. grated zucchini
    2 eggs
    1/2 c. chopped parsley
    1 c. baking mix (pancake or Bisquick)
    1/2 c. grated Parmesan cheese
    3/4 tsp. garlic salt
    1 Tbsp. olive oil
    1 Tbsp. butter
Preparation
    In a large mixing bowl, combine zucchini, eggs and parsley. In a small bowl, combine baking mix, Parmesan cheese and garlic salt and add to zucchini mixture.
    Stir just enough to dampen dry ingredients.
    Heat olive oil and butter in a large skillet.
    Drop batter from a spoon into the heated oil and brown pancakes lightly on both sides.
    Keep warm in a 300\u00b0 oven until all are cooked.
