Ingredients

2 lb. yellow-eye soldier or navy beans
1/2 tsp. baking soda
2 tsp. salt (optional)
1 Tbsp. dry mustard
1 onion, peeled
1 c. grated A dark amber or grade B maple syrup
Preparation

Wash and pick over beans. Cover with cold water. Add soda and soak for 8 hours or overnight. Rinse beans and boil in fresh water until skins wrinkle, 8 to 10 minutes. Drain off bean water and set aside. Place whole onion in bottom of bean pot or 3-quart baking casserole dish with lid. Add beans, syrup, salt and mustard. Stir to coat. Cover beans with the bean water. Bake for 6 to 7 hours in a 300\u00b0 to 325\u00b0 oven. Check and add water as needed.
