Rice Salad (Low-Fat) - cooking recipe

Ingredients
    1 1/2 c. water
    1 1/2 c. Minute rice
    1 c. shredded fat-free Mozzarella cheese
    1 c. sliced pepperoni, halved
    1 large tomato, chopped
    1 green pepper, cut into strips
    2 mushrooms, sliced
    6 pitted ripe olives, sliced
    1 c. fat-free Italian dressing
Preparation
    In medium saucepan, bring the water to boil.
    Stir in rice. Cover and remove from heat.
    Let stand for 5 minutes; cool.
    In a large bowl, mix the rice with remaining ingredients except the dressing.
    Stir in 1/2 cup of dressing.
    Toss to mix well.
    Chill. Just before serving, toss with remaining dressing to taste.
