Beet Pickles - cooking recipe

Ingredients
    1 gallon beets
    1 cup vinegar
    1 cup sugar
    1 teaspoon allspice
    2 cups water
Preparation
    Boil beets until tender and skins will slip off easily.
    Pour off water.
    Run cold water on and slip off skins.
    Bring vinegar, sugar, water and allspice to a boil.
    Put beets in jars; pour boiling liquid over and seal jars.
    Wait a few days before eating them.
