Elvira'S Fried Pea Patties - cooking recipe

Ingredients
    1 (15 oz.) can black-eyed peas
    1 large egg
    1/8 tsp. salt
    1/4 tsp. seasoned pepper
    6 heaping Tbsp. self-rising flour
    1 1/2 c. chopped onion
    1/4 c. vegetable oil
Preparation
    Pour peas in medium bowl, mash well with a potato masher.
    Add egg, spices, flour and onions; mix well. Pour oil into skillet and cook on medium-high heat.
    Drop mixture by heaping tablespoonfuls into hot oil.
    Brown on both sides.
    Drain on paper towel. Yields 12 large patties, each serving contains 99 calories.
