Potato Soup - cooking recipe

Ingredients
    5 lb. diced white potatoes
    1 chopped medium bell pepper
    1 bunch chopped green onions or 1 medium chopped white onion
    3 or 4 stalks chopped celery
    1 Tbsp. chopped parsley
    salt and pepper to taste
    1 stick margarine
    2 cans evaporated milk
    1 pkg. grated cheese
    bacon bits and sour cream (optional)
Preparation
    Cook potatoes until tender; do not overcook.
    Drain all but 1 cup of water from potatoes.
    Add evaporated milk, salt and pepper to suit taste.
    Saute pepper, celery and onion in margarine until tender.
    Combine sauteed vegetables and parsley to potatoes. Simmer for 15 to 20 minutes.
    Serve with grated cheese, bacon bits and sour cream as desired.
    Always better the second day.
    Serves 8.
