Ingredients

3 c. plain flour
2 1/2 c. sugar
1 c. coconut (I use 6 oz. frozen coconut)
1 Tbsp. baking powder
1 tsp. coconut flavoring
1/2 tsp. salt
1 c. evaporated milk
1 1/2 c. Crisco
5 large eggs
Preparation

Sift flour, baking powder and salt together. Cream shortening and sugar 10 minutes. Add eggs, one at a time, beating after each addition. Add flour mixture alternating with milk, beating after each addition. Add coconut and flavoring. Mix at low speed of mixer. Put in a large greased and floured tube pan. Put in cold oven. Bake 1 hour and 25 minutes at 350\u00b0 or until done.
