Ingredients

3 Tbsp. virgin olive oil
1 Tbsp. unsalted butter
2 tsp. minced fresh garlic
1 c. shredded basil leaves
3 Tbsp. chopped Italian parsley
2 Tbsp. chopped sun-dried tomatoes
1 large red pepper
1 large green pepper
3/4 tsp. salt
1/4 tsp. fresh ground black pepper
12 oz. angel hair pasta, cooked and drained
freshly grated Romano cheese (optional)
Preparation

Heat oil and butter in a large skillet over medium heat.
Add garlic and cook 1 minute.
Add remaining ingredients except pasta and cheese to skillet, making sure peppers are roasted and cut into thin strips.
Toss and just barely heat.
Add to pasta in large bowl; toss to coat.
Pass Romano cheese.
Makes 4 first course servings
