Cajun Sauteed Chicken - cooking recipe

Ingredients
    1 pkg. boneless chicken breasts
    1 1/4 tsp. Cajun seasoning mixture for chicken, divided
    1 1/2 Tbsp. olive oil
    1/2 c. chopped onion
    1/2 c. chopped green bell pepper
    1 (14 1/2 oz.) can Cajun or Mexican style stewed tomatoes
    1 1/2 tsp. minced garlic (1 small clove)
Preparation
    Rub chicken with 3/4 teaspoon of Cajun seasoning mixture.
    In a nonstick skillet over medium-high heat, heat oil.
    Add chicken; brown for 2 minutes per side.
    Remove chicken and reserve.
    Add onion and green pepper to skillet.
    Saute for 1 to 2 minutes, until vegetables begin to soften.
    Add tomatoes, garlic and remaining Cajun seasoning.
    Cook, stirring, for 2 to 3 minutes. Reduce heat to medium-low; return chicken to pan.
    Cover; simmer for 6 to 12 minutes, turning 2 to 3 times, until chicken is cooked through.
