Clubhouse Chicken Salad With Honey Mustard Dressing - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 lb. boneless chicken breasts, cut into chunks
    3 c. hot cooked rice
    1/2 c. sliced red onion
    1 medium green or red pepper, chopped
    1 (14 oz.) can artichoke hearts, drained and chopped
    1/4 tsp. salt
Preparation
    Heat oil in skillet. Cook chicken until lightly browned, about 5 minutes. Combine chicken, rice, onion, pepper, artichokes, salt and pepper in a large bowl. Toss with dressing. Serve warm or at room temperature.
