Chunky Chicken Salsa Sandwiches - cooking recipe

Ingredients
    2 1/2 c. diced, cooked chicken
    1 c. plain, nonfat yogurt
    1/4 c. chunky salsa
    1/2 tsp. ground cumin
    1/2 c. chopped red/green pepper
    1/3 c. fresh cilantro or parsley, chopped
    1/3 c. chopped green onions
    3 (6-inch) pita bread rounds, cut in half
    toppings: shredded lettuce, sliced ripe olives, chopped tomatoes and shredded Cheddar cheese
Preparation
    In large bowl combine chicken, yogurt, salsa and cumin; stir gently.
    Stir in pepper, cilantro and green onions.
    Line pita half with lettuce.
    Spoon chicken salad mix evenly into pockets. Sprinkle toppings over chicken salad mix.
    Serve immediately. When using nonfat yogurt, drain excess liquid by placing yogurt in a coffee filter for 5 minutes.
