Cheesy Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    8 Ritz crackers
    1/2 c. chopped onion
    2 eggs
    1 small pkg. cream cheese
    4 oz. Cheddar cheese, grated
    salt and pepper to taste
Preparation
    Peel, dice and boil eggplant; drain.
    Crush crackers; add chopped onion, eggs, cheeses, salt and pepper to taste.
    Bake in casserole dish at 350\u00b0 for 45 minutes.
