Mexican Cornbread Casserole - cooking recipe
Ingredients

1 lb. ground beef
1/4 c. chopped onion
1 can green chilies
4 slices American cheese
2 eggs, beaten
1 can cream-style corn
2/3 c. milk
1 pkg. Jiffy cornbread mix
Preparation

Brown beef; drain.
Add onion and chilies.
Combine eggs, corn and milk.
Add cornbread mix.
Stir until dry ingredients are moist; mixture will be thin.
Pour 1/2 of corn mixture into greased 9 x 9-inch dish.
Top with meat mixture.
Top with cheese. Cover with remaining cornbread mixture.
Bake for 25 to 30 minutes at 400\u00b0.
Serves 6 to 8.
Great served with red beans.
