Peanut Brittle(Microwave) - cooking recipe
Ingredients

1 c. sugar
1/2 c. white corn syrup
1 c. roasted peanuts
1 tsp. vanilla extract
1 tsp. butter
1 tsp. baking soda
Preparation

In 1 1/2-quart casserole, stir together sugar and syrup. Microwave on High for 4 minutes.
Stir in peanuts.
Microwave on High for 3 minutes until light brown.
Add butter and vanilla, blending well.
Microwave on High for 1 1/2 minutes.
Peanuts will be lightly browned and syrup will be hot.
Add baking soda and stir until light and foamy.
Pour mixture into nonstick coated cookie sheet.
Spread as thin as desired.
Let cool 1/2 to 1 hour. Break into small pieces and store in airtight container.
