Red Beans And Rice - cooking recipe

Ingredients
    2 (1 lb.) pkg. red beans
    1 can Ro-Tel tomatoes
    1 can tomatoes
    1 can tomato sauce
    5 bay leaves
    1 1/2 tsp. thyme
    1 1/2 tsp. garlic
    1 1/2 tsp. oregano
    1/2 tsp. red pepper
    1 Tbsp. Tabasco
    2 c. onions, chopped
    2 c. bell pepper, chopped
    2 c. celery, chopped
    2 lb. sausage (Thompson's)
    ham hocks
    rice
    salt and pepper
Preparation
    Soak red beans overnight; drain.
    Add water and ham hocks; simmer several hours.
    Add tomato ingredients, spices and sauteed ingredients.
    Simmer all day.
    Cook rice separately.
    Serve with red beans.
