Pickled Codfish - cooking recipe

Ingredients
    1 (4 oz.) pkg. codfish, shredded
    1/2 c. rice vinegar
    1 c. water
    3 Tbsp. sugar to taste
    1 tsp. vegetable oil
    2 small Maui onions, sliced
    1 large tomato, sliced
    2 or 3 dashes Tabasco sauce
Preparation
    Soak codfish in water for 5 minutes.
    Boil to soften for 5 to 10 minutes, then drain.
    Combine the rice, vinegar, water, sugar and oil, then add codfish to this sauce.
    Add the onions and tomato.
    Chill for 1 hour and serve.
