Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1 large diced onion
4 Tbsp. grated cheese
1/2 tsp. oregano
Dash of pepper
3/4 c. milk
2 Tbsp. margarine
1 c. seasoned stuffing
Preparation
-
Pare and dice eggplant.
Cook in salted water until tender. Drain and mash.
Add other ingredients.
Place in buttered casserole dish.
Bake at 350 degrees for 40 minutes.
