Cream Of Onion And Potato Soup - cooking recipe

Ingredients
    4 medium potatoes
    2 medium onions
    1 Tbsp. chopped parsley
    salt to taste
    3 c. scalded milk (skim)
    1 c. potato water
    2 Tbsp. flour
    2 Tbsp. margarine or butter
Preparation
    Chop onions and cube potatoes.
    Boil together until tender. Save 1 cup of potato water and add to milk, flour and margarine, which has been made into a white sauce.
    Add onions and potatoes. Season with parsley, salt and pepper.
    If you want a smooth soup, beat with an egg beater or blender (onions and potatoes).
    I like it chunky.
