Polynesian Vegetables - cooking recipe

Ingredients
    1 green bell pepper
    1 yellow bell pepper
    1 red onion
    2 tomatoes
    12 oz. jar apricot preserves
    2 Tbsp. soy sauce
    1/4 c. red wine vinegar
    1 tsp. grated ginger
    1/4 tsp. garlic powder
    3/4 tsp. salt
    20 oz. can pineapple chunks, drained
Preparation
    Cut peppers into 1-inch chunks.
    Cut onion and tomatoes into 1/2-inch wedges.
    Combine
    preserves, soy sauce, vinegar, ginger, garlic powder and salt.
    Add peppers and onion.
    Cover and cook for 10 minutes
    or\tuntil vegetables are tender.
    Add tomatoes and pineapple.\tHeat thoroughly and serve.
