Gazpacho(Cold Soup) - cooking recipe

Ingredients
    1/2 c. diced, pared cucumber
    4 ripe tomatoes, peeled and finely chopped
    1/3 c. finely chopped onion
    1 clove garlic, finely minced
    1/2 c. finely chopped green pepper
    1/4 c. olive oil
    1/4 c. cider or wine vinegar
    3 c. tomato juice
    1 tsp. salt
    1/4 tsp. black pepper
Preparation
    Combine all ingredients in a large mixing bowl.
    Cover; chill at least 4 hours.
    Serve in chilled cups.
    Makes 8 servings.
