Ingredients

1 c. all-purpose flour or 1/2 c. all-purpose flour and 1/2 c. whole wheat flour
1 c. self-rising cornmeal (cornmeal mix)
2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
1 1/2 c. buttermilk
Preparation

Combine flour(s), cornmeal, baking powder and salt.
Make a well in the center of the dry mixture and add the egg.
Stir in the buttermilk and mix.
Spray an 8 x 8 x 2-inch baking tin with nonstick cooking spray.
Spread batter evenly in pan.
Bake 25 to 30 minutes in a 425\u00b0 oven.
