Mexican Corn Zucchini Dish - cooking recipe
Ingredients

1 lb. small zucchini, sliced thin
4 to 5 medium sized ears of corn
3/4 c. finely chopped onion
1/3 c. chopped green pepper
1 tsp. salt
3 medium sized tomatoes, peeled and coarsely chopped
1/4 tsp. pepper
1 1/2 c. diced stale bread cubes
1/3 c. diced sharp cheese
2 Tbsp. vegetable oil
1/4 tsp. sugar
Preparation

Slice zucchini and cut kernels from corn.
Combine zucchini, corn, onion, green pepper, tomatoes, oil, sugar, salt and pepper. Cook, stirring gently over medium heat, for 10 to 12 minutes until zucchini and corn are cooked.
