Salmon With Saffron And Caviar Cream - cooking recipe
Ingredients

1 oz. olive oil
1 tsp. shallots, minced
1 c. chicken broth
1 oz. lime juice
1 oz. rice wine vinegar
1 tsp. balsamic vinegar
1 c. whipping cream
1 pinch saffron
2 Tbsp. red lumpfish caviar (optional)
2 (7 oz.) portions salmon fillets
Preparation

In medium saucepan over medium heat, add oil and saute shallots until soft (do not brown).
Add broth, lime juice and vinegars.
Heat to a mild boil and add cream, saffron and caviar. Mix well and place salmon in pan.
Cover and reduce heat slightly and simmer until salmon is moderately firm.
Remove and keep warm. Reduce sauce over medium heat until creamy.
Serve over salmon. Serves 2.
