Meat Ball Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1/2 c. fresh bread crumbs
    1 egg
    1 tsp. salt
    1 c. Velveeta cheese, chopped
    1/4 c. corn oil
    2 c. water
    2 large carrots, cut up
    1 c. uncooked rice
    1/2 c. chopped green pepper
    1/4 onion, chopped
Preparation
    Combine meat, bread, egg and salt; mix.
    Shape into 18 balls. Brown in small amount of oil.
    Drain off water on rice.
    Add carrots, green pepper and onion.
    Cover and simmer 25 minutes.
    Add cheese; heat until melted.
