Papeete Bay Rice Pudding - cooking recipe

Ingredients
    1 c. water
    1 Tbsp. butter
    1/2 tsp. salt
    2/3 c. uncooked rice
    1 1/4 c. half and half
    1 1/4 c. milk
    2 Tbsp. coconut cream
    1/2 c. crushed canned pineapple, drained
    1 egg yolk
    1/3 c. sugar
Preparation
    Bring water, butter and salt to a boil in a saucepan.
    Add rice and simmer, uncovered, until water is absorbed.
    Heat half and half and milk.
    Stir into rice and simmer until creamy.
    Add coconut cream and simmer 1 minute.
