Spinach-Chicken Pasta Casserole(Heart Healthy) - cooking recipe
Ingredients

10 oz. uncooked mostaccioli
10 oz. pkg. frozen spinach
Pam vegetable cooking spray
2/3 c. chopped onion
2 large cloves garlic, chopped
1 lb. skinless, boneless chicken, cubed
2 (14 1/2 oz.) cans tomatoes, undrained
3 Tbsp. tomato paste
1 1/4 tsp. dried basil
3/4 tsp. dried oregano
1/4 tsp. red hot sauce or 1/4 tsp. crushed red pepper
1/2 c. grated Parmesan cheese, divided
Preparation

Thaw spinach; drain.
Prepare mostaccioli.
Spray nonstick skillet with Pam spray.
Saute onions and garlic; add chicken cubes for 5 minutes.
Stir in tomatoes, tomato paste and seasonings.
Bring to a boil.
Simmer (no cover) 5 minutes.
