Eggplant Or Squash Casserole - cooking recipe

Ingredients
    2 c. squash or eggplant
    2 Tbsp. finely chopped onion
    1/4 c. water
    2 eggs
    2 slices soft bread
    1/2 c. milk
    1 tsp. salt
    1 1/4 c. shredded sharp Cheddar cheese
Preparation
    Cook squash or eggplant and salt until tender.
    Mix all ingredients except 1/4 cup of cheese; mix well.
    Pour into greased 1-quart baking dish.
    Bake, uncovered, 25 minutes at 350\u00b0. Sprinkle rest of cheese on top and bake 5 minutes longer.
