Shrimp Vera Cruzano - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 large chopped onion
    1 large chopped bell pepper
    2 garlic cloves, chopped
    1 c. sliced mushrooms
    2 large tomatoes, coarsely chopped
    1 small can sliced black olives
    1 lb. whole shrimp, shelled and deveined
    fresh cilantro
    salt and pepper to taste
    Mexican or wild rice
Preparation
    Saute onion, bell pepper and garlic in olive oil just until tender.
    Add mushrooms, tomatoes and olives.
    Cook slowly over low heat.
    While vegetables are still crisp, add shrimp and cilantro. Season to taste.
    Continue cooking just until shrimp are pink. Serve over rice.
