Toby'S Potato Salad - cooking recipe

Ingredients
    9 medium potatoes (red skin), well scrubbed
    3 ribs celery, chopped
    1 carrot, grated
    1/2 green pepper, chopped
    1 medium onion, chopped
    2 hard-boiled eggs, chopped
    salt and pepper to taste
    mayonnaise
Preparation
    Boil potatoes until tender;
    drain and cut into chunks. (Leave skins
    on.) Stir in remaining ingredients, using amount of mayonnaise you desire.
    Chill.
