Chicken And Broccoli Casserole - cooking recipe
Ingredients

1 whole chicken (approximately 3 lb.)
1 pkg. frozen broccoli, cut up
2 to 3 hard-boiled eggs (optional)
1 (8 oz.) carton sour cream (low-fat or nonfat okay)
1 can cream of celery soup (low-fat okay)
1 can cream of chicken soup (low-fat okay)
1 c. shredded Cheddar cheese
salt and pepper to taste or use seasoned salt
Preparation

Boil chicken until meat pulls away from ends of leg bones or until done.
Cool and take meat off bones, pulling into chunks or bite size pieces.
Using a 2 or 3-quart casserole dish, layer chicken on bottom.
Partially cook broccoli and layer on top of chicken.
Slice hard-boiled eggs and place on top of broccoli (optional).
In separate bowl, mix together the sour cream, soups, salt and pepper.
Spread over the top of casserole.
Top with cheese.
Refrigerate until ready to bake.
Best if made the day before and baked the next day.
Bake at 350\u00b0 for approximately 45 minutes (or until bubbly).
Serve over cooked rice.
Yields 5 to 6 servings.
Also good with asparagus instead of broccoli.
