Frittata(Italian Style Omelet) - cooking recipe
Ingredients

1/4 c. chopped onion
3 Tbsp. olive oil, cooking oil, butter or margarine
1 1/2 c. chopped, cooked vegetables or meat (ham)
6 beaten eggs
1/2 tsp. salt
1/2 tsp. pepper
grated Parmesan or Romano cheese
Preparation

In saucepan cook onion in 1 tablespoon of the oil, butter or margarine until tender.
Remove from heat.
Stir in vegetables or meat.
Combine eggs, salt, pepper and vegetable or meat mixture. In a 10-inch ovenproof skillet, heat the remaining oil, butter or margarine over medium-low heat.
Pour egg mixture into skillet. As eggs set, run a spatula around edge of skillet, lifting egg mixture to allow uncooked portion to flow underneath.
Continue cooking and lifting edges until mixture is almost set (surface will be moist).
The total cooking time should be about 6 minutes. Place skillet under broiler, 5 inches from heat.
Broil for 1 or 2 minutes or just until top is set.
Sprinkle with Parmesan or Romano cheese.
Loosen bottom of Frittata and slide out onto plate.
Cut into wedges.
Makes 4 to 6 side dish servings.
