Polynesian Vegetables - cooking recipe

Ingredients
    1 (12 oz.) jar apricot preserves
    2 Tbsp. soy sauce
    1/4 tsp. garlic powder
    1 yellow pepper, cubed
    1 medium pineapple, pared and cut into 1-inch chunks
    1/2 c. red wine vinegar
    1 tsp. to 1 Tbsp. ginger
    1 green pepper (cubes)
    2 tomatoes, cut into wedges
Preparation
    In skillet, combine preserves, vinegar, soy sauce, ginger, garlic powder and 3/4 teaspoon salt.
    Add peppers and onions. Cover and cook (stirring occasionally) until vegetables are tender but crisp.
    Add tomatoes and pineapple.
    Heat through and serve.
