Creole Baked Catfish - cooking recipe

Ingredients
    1 c. chopped onion
    1/2 c. chopped green pepper
    1 clove garlic, minced
    1/4 c. oil
    1 (14 oz.) can whole tomatoes
    1 (8 oz.) can tomato sauce
    1 1/2 tsp. seasoned salt
    1/4 tsp. thyme
    1/8 tsp. pepper
    1 small bay leaf
    3 lb. dressed and skinned catfish
Preparation
    Saute onion, green pepper and garlic in oil until tender.
    Add tomatoes and tomato sauce and simmer 10 minutes.
    Place catfish (salted and peppered) in oiled 3-quart casserole.
    Pour sauce over all.
    Cover and bake at 400\u00b0 for 30 to 40 minutes.
    Great with green salad and hot garlic bread.
