Cajun Casserole - cooking recipe

Ingredients
    1 (20 oz.) pkg. 15 beans
    1 (14 1/2 oz.) can stewed tomatoes
    1 large onion, chopped
    1 clove garlic, chopped
    1 lemon, juiced
    1 to 2 lb. ham or sausage, chopped
    3 c. cooked rice
Preparation
    Wash beans.
    Put in a large pot and cover with water and 2 teaspoons salt. Soak overnight.
    In the morning, drain and add 2 quarts water.
    Bring to a boil and simmer 3 hours.
    Add seasoning packet from bean package and all ingredients except rice. Simmer 30 minutes. Stir in rice and serve hot or freeze to serve later.
