Morning Glorious Muffins - cooking recipe
Ingredients

2 c. flour
2 tsp. baking soda
1 1/2 c. finely shredded carrot
3/4 c. coconut
1/2 c. raisins
3 eggs, slightly beaten
1/2 tsp. vanilla
1 1/4 c. sugar
2 tsp. cinnamon
1 1/2 c. peeled and chopped apple (1 large)
1/2 c. chopped nuts
1 c. oil
Preparation

In a mixing bowl, combine flour, sugar, soda and cinnamon. In another bowl, combine carrot, apple, coconut, raisins and nuts. Stir in beaten eggs, oil and vanilla.
Add to dry ingredients, stirring until moistened.
Fill muffin cups 2/3 full.
Bake at 350\u00b0 for 18 to 20 minutes.
Yield: 24 muffins.
