Coq Au Vin - cooking recipe

Ingredients
    2 chickens, quartered
    1 tsp. salt
    1/4 tsp. pepper
    1/4 lb. butter
    2 1/2 c. Burgundy wine
    10 to 12 peppercorns
    1/2 tsp. parsley
    3 bay leaves
    1/2 tsp. thyme
    2 cloves garlic, smashed
    1/4 lb. salt pork
    1/2 to 3/4 lb. mushrooms
    5 Tbsp. flour
    chopped onions
    1 Tbsp. oil
Preparation
    Mix flour, salt and pepper.
    Coat pieces of chicken.
    Melt butter and oil in a heavy skillet.
    Put browned chicken in shallow baking dish.
    Retain drippings.
    Add Burgundy, peppercorns, parsley, thyme, bay leaves, garlic, salt pork and chopped mushrooms.
    Add chopped onions.
    Boil liquid for 5 to 10 minutes in skillet.
    Remove salt pork.
    Pour over chicken.
    Refrigerate overnight.
    Bake at 325\u00b0 for 2 hours.
