Canned Sweet Peppers - cooking recipe

Ingredients
    2 qt. green bell pepper quarters
    1 qt. red bell pepper quarters
    1 qt. yellow bell pepper quarters
    1/4 c. oil
    4 tsp. salt
    1 qt. water
    1 qt. vinegar
    3 c. sugar
Preparation
    Combine green, red and yellow pepper quarters with water to cover in saucepan.
    Bring to a boil, stirring occasionally.
    Cook for 4 minutes; drain.
    Pack in 4 hot, sterilized quart jars.
    Add 1 tablespoon oil and 1 teaspoon salt to each jar.
    Combine 1 quart water, vinegar and sugar in saucepan.
    Bring to a boil, stirring frequently.
    Pour over peppers, leaving 1/2-inch headspace; seal with 2-piece lids.
    Process in boiling water bath for 10 minutes. Yield:
    64 servings.
