juice of 1 lemon
2 Tbsp. olive oil
1 tomato, sectioned
salt
ground pepper
mint leaves
lettuce, torn
Preparation

Combine all ingredients, except mint leaves and lettuce, in large, flat-bottomed salad bowl, and refrigerate for 30 minutes to 1 hour. When ready to serve, add lettuce and mint leaves; toss.
