Patty'S Zucchini Sauce - cooking recipe
Ingredients

1 large can whole, peeled tomatoes
1 large or 2 small zucchini, peeled
1 medium onion
1 tsp. chives
1 large clove garlic
2 Tbsp. fresh chopped parsley
1 Tbsp. fresh chopped basil
1 to 2 Tbsp. oil
1/4 tsp. pepper
1/4 tsp. lemon pepper
1/2 tsp. salt
1 Tbsp. red wine
1 Tbsp. grated Parmesan cheese (optional)
Preparation

Crush tomatoes in saucepan and set aside. Chop zucchini, onion and garlic in small pieces.
Saute in a Teflon frying pan with the oil, parsley and basil for about 10 minutes.
Add to the tomatoes and heat to boiling. Add the salt, pepper, lemon pepper, wine and cheese. Simmer, uncovered, for approximately 15 to 20 minutes. Serve over spaghetti.
