Tex-Mex Meat Loaf - cooking recipe

Ingredients
    1 egg, slightly beaten
    1 c. soft bread crumbs
    1 (15 oz.) can tomatoes, drained and cut up
    1 (4 oz.) can diced green chili peppers, drained
    1/2 c. chopped ripe olives
    1/2 tsp. cumin
    1/4 tsp. pepper
    1 1/2 lb. ground turkey or beef
    1/2 to 3/4 c. shredded low-fat Cheddar cheese
Preparation
    Combine egg whites, bread crumbs, tomatoes, chili peppers, olives, onions, cumin and pepper.
    Add turkey or beef; mix well. Place mixture into 9 x 5 x 3-inch loaf pan.
    Bake at 350\u00b0 for 55 to 60 minutes.
    Transfer to a platter.
    Top with
    cheese and let set for 5 minutes.
    Serves 6.
