Eggplant Skillet - cooking recipe
Ingredients

1 lb. ground beef or ground turkey
1/4 c. chopped onion
1/4 c. chopped celery
1 (8 oz.) can tomato sauce
1/2 c. water
1/2 to 3/4 tsp. dried oregano
1 small eggplant, cut in 1/2-inch slices
paprika
4 oz. sharp Cheddar, shredded
Parmesan cheese
Preparation

Cook beef or turkey, onion and celery until meat is browned. Drain off excess fat.
Stir in tomato sauce, water and oregano. Season eggplant slices with salt and pepper.
Arrange on top of meat sauce.
Cover; simmer until eggplant is tender, 15 to 20 minutes.
Top with shredded Cheddar; sprinkle with paprika.
Serve with Parmesan cheese.
