Lemon Gem Muffins With Cream Cheese - cooking recipe

Ingredients
    2 c. all-purpose flour
    1 tsp. baking soda
    1/2 tsp. salt
    1/3 c. sugar
    2 large eggs
    1/2 c. fresh lemon juice
    1 stick (1/2 c.) unsalted butter, melted and cooled
    1 tsp. vanilla
    cream cheese as an accompaniment
Preparation
    In a bowl, whisk together flour, baking soda, salt and sugar. In another bowl, whisk together eggs, lemon juice, butter and vanilla.
    Add egg mixture to flour mixture and stir batter until it is just combined.
    Pour batter into buttered 1/3-cup muffin tins and bake in the upper third of a preheated 400\u00b0 oven for 10 to 12 minutes, or until a tester comes out clean.
    Turn muffins out onto a rack, let them cool, and serve them with the cream cheese.
    Makes 24 small muffins.
