Spinach, Rice & Feta Pie - cooking recipe

Ingredients
    2 tsp. butter
    3/4 c. chopped onion
    2 tsp. all purpose flour
    1/2 tsp. salt
    1/4 tsp. pepper
    1 1/2 c. low fat milk
    2 c. cooked brown rice
    3/4 c. crumbled feta cheese
    1 large egg, lightly beaten
    2 large egg whites
    1 (10 oz.) pkg. spinach, fresh cooked & chopped
    cooking spray
    1/4 c. grated Parmesan cheese
    9 inch pie shell
Preparation
    Preheat oven to 400\u00b0. Melt butter in large saucepan over medium heat. Add onions and saute 3 minutes. Stir in flour, salt and pepper. Gradually add milk, stirring with a whisk until well blended. Bring mixture to a boil and cook 1 minute or until slightly thick, stirring constantly. Remove from heat and stir in rice, feta cheese, egg, egg whites and spinach. Pour mixture into pie shell, coated with cooking spray. Sprinkle Parmesan cheese over pie. Bake for 35 minutes or until set. Broil 2 minutes or until pie is golden brown.
