Loukoumothes - cooking recipe

Ingredients
    1 tsp. easy blend yeast
    1 c. warm water
    1 c. plain flour
    large pinch of salt
    vegetable oil (for frying)
    6 tsp. thyme
    1/2 tsp. ground cinnamon
    scented honey
Preparation
    Sift flour with salt and mix with dried yeast. Add water slowly and beat until mixture is smooth. Cover with towel and let it rest for 1 hour.
    Heat oil to just under smoking point in deep fryer and drop teaspoons of mixture in, about 6 at a time.
    Dip teaspoon in cold water after each drop to prevent sticking. Turn; lift out with a slotted spoon.
    Sprinkle with honey and cinnamon.
