Good Luck Beans - cooking recipe

Ingredients
    1 lb. each: pinto beans, small lima beans, split peas, black turtle beans, lentils and black-eyed peas
    1 lb. ham pieces
    1 large onion, chopped
    1 clove garlic
    1 can Ro-Tel tomatoes and green chilies or plain tomatoes
    juice of 1 lemon
    1 tsp. salt
Preparation
    Mix 1 pound of each type of bean.
    Rinse 1 1/2 cups of mixed beans.
    Soak overnight in water.
    Drain and add 2 quarts of water and at least 1 teaspoon salt.
    Add ham.
    Cook slowly for 3 hours. Add onion, garlic, Ro-Tel tomatoes and lemon juice.
    Simmer for 2 hours.
    Serve with hot cornbread.
