Smothered Liver - cooking recipe

Ingredients
    1 lb. calf liver
    salt and pepper
    1/2 c. flour
    2 Tbsp. bacon drippings
    1 c. hot water
    1 Tbsp. minced onions
Preparation
    Slice liver
    thin; dip in boiling water for an instant, then drain.
    Sprinkle
    with seasoning;
    roll in flour.
    Fry in drippings; turn once.
    Add hot water and green onions.
    Reduce heat;
    cover and cook 15 minutes.
    Serve with grits.
