Primero Mushroom Bisque - cooking recipe

Ingredients
    1/4 c. sweet butter
    1 small onion, chopped
    1/2 c. chopped celery
    3/4 lb. mushrooms, sliced
    1 medium-size potato, peeled and diced
    1 c. water
    1 tsp. salt or to taste
    3/4 tsp. fresh, minced thyme or 1/4 tsp. dried
    pinch of white pepper
    2 c. milk
    3/4 c. heavy cream
    1/4 c. Amonfillado sherry
    2 tsp. soy sauce
    sour cream (for garnish)
Preparation
    Melt butter in 6 to 8-quart Dutch oven over medium heat.
    Add onion and celery.
    Cover and cook until transparent, about 10 minutes; stir now and then.
