Chinese Chicken Wings - cooking recipe

36 chicken wings
1 c. soy sauce
1/2 c. sugar
1 c. dark brown sugar, packed
Preparation

Preheat oven to 325\u00b0.
Cut off wing tips and wrap and freeze for stock/broth.
Cut chicken wings into two pieces, separating them at the joint.
Put the 36 parts in each of 2 large shallow roasting pans.
Combine the soy sauce and the sugars and pour the mixture over the chicken.
Bake for 30 minutes.
Remove from the oven and turn each piece.
Return pans to the oven for 30 minutes. Turn the wings again and cook for about 20 minutes longer or until mahogany colored and very tender.
Transfer wings to a large, warm platter and garnish with a bouquet of parsley.
